Tasting notes

A perfect growing season coupled with a "perfect" arctic blast in November, allowed us to produce this gem of a wine. Crisp and sweet, the intensely rich notes of stone fruits and sweet herbs make this a great after dinner pairing to cheeses, dried fruits or on its own. For the daring, pour over vanilla bean ice cream for the ultimate dessert.

Production notes

Crafted in the traditional style of Ice Wine, harvest occured in the early hours of the day in 12-18 degree temperatures.  Pressing was done at 18 degrees F, and the juice was allowed to settle for several days at freezing temperatures.  A commercial yeast isolated from the Sauternes region of France was used for fermentation.  Fermentation, which began with the inital culture build-up and ended when the desired residual sugar level was achieved, was maintained at 60 degrees for 37 days.  The wine was then fined, filtered, and bottled 6 months later.
